Irish Stew (from the Guinness Book of Pub
Food) 2 kg shoulder of lamb 1.4 kg potatoes, peeled and chunked
4 onions, chopped 4 leeks, sliced 8 carrots, diced 250 gr finely
shredded cabbage chopped parsley bouquet garni salt/pepper
1.7 liters lamb/ veal stock Method:
Put the meat into cold water, bring to boil, then discard the water.
Add onions, carrots, leeks, stock and bouquet garni; add water to cover. Simmer
for one hour; add potatoes and cook for an additional 25 minutes. Add cabbage,
season and cook another 10 minutes. Serve garnished with parsley. Enjoy! |
